Gourmet Organic Olives from Peru
Olives make a great appetizer for entertaining -- just open the jar, put then in a bowl and serve. They also make a wonderful addition to salads or other dishes.
We have the classic organic Green Botija Olive in brine with pits. This green olive is firmer with a stronger taste that many olive lovers enjoy. Now for those liking a milder olive the organic Black Botija Olive might be preferred. This black olive is also in water with pits but is softer in texture with a smoother taste. Then one of the most unique versions of this olive is the organic cured dried Black Botija pitted olive. This cured dried pitted olive is by far the minder version of the Botija olive and is easy to eat and cook with as there are no pits. While the olive is dried it is still very moist and maintains its nutrients because it is processed a low temperatures (raw olives). This dried pitted Black Botija olive is also available in an herbed version which makes it a bit drier because the herbs sprinkled on the olives absorb some of the natural oils.

These rich, full-flavored olives are grown south of Lima, Peru on a farm where age old techniques of sustainable organic farming are used including mythology that includes natural pollination which creates a more robust harvest.
