This light red vinegar is technically not a vinegar.  It is the probiotic rich plum juice, or brine, that results from the fermentation process of the umeboshi plum. Over the year the fermenting brings out the tart living flavor that only fermentation can create.  The fine herb flavors also come forward in this fragrant, flavorful seasoning.
