If you haven't had a smoothie bowl before you might be scratching your head and wondering why on earth you would pour a smoothie into a bowl and then eat it with a spoon. We understand; we thought the same thing initially until we tried one. And another. And another. And soon we became proud smoothie bowl consuming fans! Here's why smoothie bowls are so great:

This vegan recipe is a smoothie bowl classic contributed by Texan-based health and wellness enthusiast, Madeline. It can be made in five minutes for a quick and delicious breakfast. The recipe calls for cauliflower, which will add volume and nutrition to the smoothie bowl without changing the flavor. It blends nicely when frozen to help create the perfect consistency.

Base ingredients:

  • 1 frozen banana
  • 1/2 cup frozen cauliflower
  • 1 cup frozen blueberries
  • 1 tbsp almond butter
  • 1 scoop collagen
  • 1 tsp cinnamon
  • 1/2 cup - 1 cup almond milk (if you prefer a slightly less thick consistency, opt for 1 cup)

Topping:

  • 1/4 cup oats
  • Handful blueberries
  • 1-2 tbsp peanut butter
  • Drizzle of honey

Instructions:

1. Place all the ingredients in a blender and blend until you have a thick, creamy consistency (this is key, so you can eat it with a spoon)
2. Pour into a bowl and top with oats, blueberries, peanut butter and honey.
3. Enjoy this chilled, delicious treat!

Tips:

  • You can substitute honey for another sweetener (maple syrup, agave syrup, coconut sugar, stevia, etc.).
  • If you don't have a frozen banana, you can use a fresh banana and a few cubes of ice.
  • Instead of almond milk, you can use another plant-based alternative.
  • For an extra boost of nutrients, add a sprinkle of chia seeds, flax seeds or hemp hearts.
