What is Coconut Sugar?

 

Coconut sugar is a sugar derived from the blossoms of a coconut tree. Harvesters cut into the blossom and the sap starts to flow from the cut and the sap is gathered in bamboo containers. The sap is gently warmed to encourage water evaporation which transforms the translucent sap into a thicker syrup, much like maple syrup is processed. And, the syrup is eventually reduced to a granular form. Palm sugar is traditionally hand-harvested in the canopy of Indonesian coconut groves where farmers have harvested the nectar from coconut palm trees for herbal medicine and food for centuries.

 

Coconut sugar is unrefined and has a low glycemic index. It has a delicately sweet taste, with a hint of caramel. As a natural plant sugar it is the perfect substitute for white or brown sugar.
