The only difference (besides vowels) between cocoa powder and cacao power is that cocoa powder is made by grinding roasted beans and then high heat extracting the fat/butter. The high heat processing results in lowering the nutrient value and reducing the enzyme content, as well as diminishing the flavor characteristics. While cacao powder is made by cold pressing the un-roasted cacao beans, to remove the fat/butter. This artisan technique results in our cacao power that is richer in flavor, and also retains its nutrients and enzymes.
Our cold pressed cacao beans are fine ground to create a premium grade, gourment, organic heirloom cacao powder. Cacao beans, or seeds, are what chocolate is made from.
The designation of raw indicates low temperature processing, which better retains nutrients, enzymes, and the flavor characteristic of the cacao bean, making a better chocolate.
