Once they are allowed to fully ripen on the tree they turn black and are at their full flavor profile and maximum softness. Then these special olives are traditionally cured in spring water and sea salt for nine or ten weeks. This old-world fermentation method preserves the olives' personality, flavor and nutrients. Once fully cured, the olives are dried and hand pitted. Though they are robust in flavor, they are also mild and delicious. They pair well with salads, pastas, cooked savery sautés, serve them on a charcuterie board or in a bowl by themselves.
